This project is looking for a Birch sap Specialist to oversee the project and advise on techniques for the production and preservation of Birch sap.

Over two seasons, three different methods of stabilising birch tree sap will be trialled across four sites in Wales, to assess their suitability within varying production scales of birch concentrate production.

The specialist will be expected to work alongside other stakeholders of the project to ensure effective, timely project delivery.
